The U.S. Food and Drug Administration has selected Intertek Alchemy as one of the authorized trainers to present the Better Process Control School. Through our partnership with the Consumer Brands Association, Intertek Alchemy is able to provide busy food safety and quality professionals with a self-paced, online certification program to take from the comfort of your home or office.

The Better Process Control School – Aseptic Foods Training & Certification course gives learners insights and education in the principles and practical application of the guidelines determined by the FDA. In this course you will learn the scientific basis of thermal processing, strategies for pathogen control, sanitation best practices and more.

For individuals working exclusively in aseptic processing and needing an aseptic processing certification, this is the course for you.

This course allows you to meet the FDA’s CFR – Code of Federal Regulations Title 21 requiring a supervisor onsite during all operating hours who has “satisfactorily completed the prescribed course of instruction.”

Participants are also recommended, but not required, to purchase The Canned Foods Manual ebook available on Amazon or the print version available through the Consumer Brands Association.

About Your Certificate:

By completing this course, you will earn a Certificate of Completion and meet the FDA regulations in 21 CFR 108.25(f), 21 CFR 108.35(g), 21 CFR 113 and 21 CFR 114, which require that each processor of low-acidified and acidified low-acid canned foods operate with a certified supervisor on hand at all times during processing. This also meets similar USDA Food Safety and Inspection Service regulations 9 CRF 318.310 and 381.310 for thermally processed meat and poultry. You can download and print this certificate at any time, as many times as you need, through your Zosi Learner Portal. All Zosi Learning certificates include a unique certificate ID and proprietary validation method that allows auditors and others to verify your certificate.

How it works:

  • After purchasing a course, you will be given access to the Zosi Learner Portal. Here you can start the course or assign it to someone else.
  • You can start and stop your training at any time and pick up where you left off after each session.
  • Each course was designed to be played on a desktop or laptop computer. It is recommended one of these two options is used for the most optimized learning experience.
  • You will need to pass the exam at the end of each chapter with a score of 70% or higher to move on to the next chapter. You can retake the exam as needed.
  • Upon completion of the course and passing each exam you will receive a downloadable Better Process Control School Certificate of Completion. Downloading your certificate is available at any time in the Zosi Learning Portal.
  • You have up to 6 months from your purchase date to complete the training.

Which course is right for me?

Zosi Learning offers four different course options to fit your needs. We suggest everyone take the Better Process Control School – Complete Training & Certification since its certification covers all applicable processing types governed by the FDA. This empowers you with the most certification coverage in case your product offering or job role evolves over time. If you are only concerned with one processing type, however, simply choose the one applicable to you.

The Retort, Acidified and Aseptic course lengths and costs are slightly less than the Complete course and will fulfill your FDA and USDA certification needs relating to that specific processing type.

Does this meet the FDA or USDA training and certification requirements?

Yes, this an approved course that meets the related FDA requirements of 21 CFR 108.25(f), 21 CFR 108.35(g), 21 CFR 113 and 21 CFR 114, 9 CFR 318.310 and 9 CFR 381.310.

How long will this take?

All Zosi Learning courses are self-paced, meaning you can start and stop on your own schedule. The Better Process Control School – Complete Training & Certification, covering retort, acidified and aseptic processing, is estimated at 17 hours of total learning and exam time. The Retort certification is estimated at 13 hours, the Acidified certification is estimated at 11 hours and the Aseptic Certification is estimated at 10 hours of learning and exam time.

Do I have to pass an exam?

At the end of each chapter, you will be presented with a short exam testing your knowledge of the content you just learned. A passing score of 70% or higher is required in order to move on to the next chapter. If you score less than 70%, you will need to retake the exam. You are not required to retake the learning portion of the chapter before retaking the exam.

Does this certification expire?

No, this certification meets all the current FDA requirements and does not include an expiration date.
